Spontaneous trip to Vietnam

First time traveling to Vietnam and have fallen in love! I’ve been to other countries in South East Asia but Vietnam is now sitting at the top of my list. A spontaneous decision booking last minute sale flights (return for $385 AUD!), and no accommodation or itinerary until arrival has proved to be the best approach for my partner and I.
