One of the biggest features of Meizhou Hakka cuisine is salt-baked chicken. I found a restaurant with the most positive reviews. This restaurant only serves salt-baked chicken. According to the boss, the chickens are all slaughtered on the same day and marinated with salt. They can be steamed for a more tender taste, or traditionally baked, which is more fragrant. A whole chicken is served on the table in a few minutes [grin] It is very clean and fragrant [color] The boss also specifically reminded that the chicken offal powder can only be served after the chicken is finished, because the powder needs to be poured into the soup bowl of the salt-baked chicken because it contains the freshest chicken juice [grin]
